Bonus Post: Shortbread Biscotti

Among the many wonderful qualities I inherited from my dad, a sweet tooth is probably the most appropriate attribute to honor in this space on Father’s Day. In addition to providing creative consultation, my dad is one of my top taste testers because – when it comes to desserts (not so much with vegetables!) – he has a very adventurous palate. When geography allows, he is willing to taste, honestly critique, and offer suggestions on my latest creation.** Even better? He’ll do so any time of the day or night. Somehow over the years, after breakfast has become our favorite time to indulge in a sweet treat!

To show my appreciation, I developed a recipe that puts a fresh spin on his favorite cookie, incorporates some of his favorite ingredients, and would be great at the breakfast table with a second cup of coffee and the newspaper… Chocolate-dipped Shortbread Biscotti with Pistachios and Dried Cherries.

**Happy Father’s Day, Dad! Thank you for nurturing and supporting not just my baking but also my love of travel. It’s no surprise most of my favorite places are near water. You taught me to love the ocean and not be afraid when the water was rough or if I got knocked down by a big wave, which also turned out to be a great metaphoric lesson for life. When I was small, you’d let me sit on your shoulders at parades and ride on the back of your bike at the shore so that I could experience everything happening around me. And you continued to encourage that insatiable curiosity by instilling in me a love of reading. (Thank you for doing ALL the voices when you read to me as a child — no easy task with the Roald Dahl books! — and indulging my soft spot for nostalgia by agreeing to read aloud the same book each Christmas Eve even though I’m an adult.) Thank you for cultivating and embracing the open-mindedness with which I approach every adventure. (I guess that’s what happens when you teach a kid to appreciate the Beatles and Motown as much as she appreciated the latest Disney soundtrack.) Clearly, Suitcases & Sweets (and I) wouldn’t be the same without an incredible father like you. I love you. :)

  2. What a priceless Father’s Day tribute and much deserved! Your sentiments and memories are beautiful as is the very special way you expressed them – so like you. This is a gift Dad will certainly cherish for many years to come!

  4. Your Father’s Day blog brought me to tears. Knowing your dad, I know every word is true. How fortunate he is to have such an incredible daughter. The biscotti cookies are a must-bake recipe. I would really have to practice self-control to stop at just one with my second cup of coffee.
